Biscoff Cheesecake

Biscoff Cheesecake

Serves 8 people

Ingredients

  • Digestive biscuits - 200 grams
  • Melted butter - 100 grams
  • Cream cheese - 300 grams
  • Icing sugar - 1⁄2 cup
  • Whipped cream - 200ml
  • Meron Spreadable agar agar - 2 tsp
  • Milk - 1⁄4 cup
  • Biscoff spread - 1 jar

Preparation

  1. Crush the digestives until a fine powder is formed and add in the melted butter. Mix well and transfer into a lined dish. Press down until well packed and refrigerate for 10 minutes.
  2. Into a bowl, add in the cream cheese along with icing sugar and half jar of biscoff spread.
  3. Whip until well combined and add in the whipped cream and fold until a homogenous mixture is formed.
  4. Into a saucepan with milk, add in 2 tsp of Meron’s spreadable agar agar and
    mix well.
  5. Simmer on low heat for 2 minutes. mix well until the wondergel
    dissolves completely.
  6. Pour this into the cheesecake mixture and whip again until well combined.
  7. Pour this into the baking dish lined with digestives.
  8. Refrigerate for a minimum of 4 hours.
  9. Top it off with the rest of the biscoff spread and refrigerate again for another hour.
