A hydrocolloid belonging to a family of water-soluble polysaccharides which are found in certain species of red seaweed. An excellent gelling agent with a wide spectrum of textural properties. It forms transparent thermo reversible gels with minimal syneresis, melts at high temperature and has the ability to gel at room temperature thus refrigeration is not required.

Refined Carrageenan is extracted from seaweeds. Seaweed undergoes alkali treatment, washing, chopping then extraction, filtered and precipitated with KCl, dried and powdered.
